While I was planning my recent trip to northern Vermont, I researched the food at the hotels I was considering. Looking at the websites and menus gave me an idea that the Lodge at Spruce Peak had good, healthy, local food. But you never know.
Some places consider local to be defined as regional. Or, the food could have been sitting around for a while. I had low expectations and since I would have my car, I could find better food if need be. My phone has the Happy Cow app, which is good for finding vegetarian or vegan food wherever you are.
Imagine my delight when the food at the hotel’s restaurant turned out to be SO delicious. And I could tell it was really fresh.
The first night, I ordered what they call a Knee Deep green salad. It’s named for the farm it comes from - Knee Deep in Jeffersonville, VT. They are certified organic. Here is a picture of the salad I brought home with me, after having it every day I was there!
